Chewy Peanut Butter-Millet Bars

These no-bake bars will remind you a bit of Rice Krispies treats. The process used to make them is basically the same. But I’ve swapped the puffed rice for puffed millet, added peanut butter, and sweetened the whole thing with honey and agave nectar (instead of marshmallows!). Raspberry Cupcakes with Cocoa Frosting

Happy Valentine’s Day! I made these cupcakes for my son’s preschool class last year. The raspberry cake recipe is from Martha Stewart. The frosting is an easy ganache one like this, but made with cocoa powder instead of chopped chocolate (I’m not about to buy a pound of premium chocolate to make frosting for a bunch of 2 year olds!). I remember referencing a few different recipes to make it, but now can’t find any of them online. Maybe it was from the back of the cocoa canister? Let me know if you find one!

“Vintage” Lollipops

I came across these gorgeous old-fashioned lollipops on Etsy and had to share them! Wouldn’t they make a great party favor or stocking stuffer? I’m also imagining a colorful candy buffet at a holiday party. You could display them upright by pressing the sticks into a block of foam…

Chocolate-Chip Cupcakes

What do you serve a bunch of toddlers? Today was my son’s second birthday, so I made these chocolate-chip cupcakes for his class. The cake recipe is from Martha Stewart’s Cupcakes. Nice and light, it uses cake flour and whipped egg whites and is reminiscent of white cake mix, except much tastier. I needed a foolproof frosting that I could make the night before, so I chose cream cheese. Before school, I re-whipped the frosting and studded it with mini chocolate chips before piping piles on top of the cupcakes. (I used mini chips in the frosting so I could pipe it and also because I figured regular chips could pose a choking hazard.) They finished cupcakes were so cute and everyone loved them.
