Breakfast Banana Split

Brûléed bananas are so easy to make. Just split a banana, sprinkle with sugar, cinnamon, and flaxseed oil, and put it under the broiler for a minute or two. The sugar gets crisp and caramelized, the banana gets warm and juicy, and you get to eat it! I love brûléed bananas on top of oatmeal, on their own, or topped with plain Greek-style yogurt, homemade granola, and drizzled with honey! My kids love assembling their own “sundaes” for breakfast.

Breakfast Banana Split
Makes 2
2 ripe bananas
1 packed tablespoon brown sugar
Dash of ground cinnamon or cardamom
1 teaspoon flaxseed oil
Plain Greek-style yogurt
Honey for drizzling

  1. Heat broiler with rack in top of oven; line a baking sheet with foil (parchment will burn.) In a small bowl, stir together sugar, cinnamon, and flaxseed oil. Peel bananas and split lengthwise; arrange cut-side up on baking sheet. Sprinkle sugar mixture over bananas. Broil until sugar is melted and bubbling and bananas are getting soft, about 2 minutes.
  2. Place 2 banana halves in a bowl and top with a scoop of yogurt. Sprinkle with granola and drizzle with honey.
